SEAFOOD RISOTTO (RISOTTO AI FRUITTI DI MARE)

Risottos have a reputation for being difficult to make, but this effortless recipe will make you want to make this fancy dish a casual dinner serving 



Ingredients 

  • 500gr/half a pack of risotto rice
  • 320 gr of mixed sea food ( mussels,squid, shrimp. octopus )
  • 300 gr. of mini shrimps
  • 200 gr only mussels ( you can add as much of seafood you want )
  • 8 cups of water and 2 cubes of vegetable stock 
  • 1 large onion 
  • small cube of butter
  • salt, pepper
  • parsley- onion powder mix
  • 2 cloves of garlic


  • Instructions:


  • 1. Add Olive oil to a frying pan and add the chopped onions, with 2 cloves of garlic, and lets it stir in medium heat for about 2 min


2. Add the sea food to the pan and let it cook for about 10-12 min with a tea-spoon of salt , pepper for preference and parsley garlic powder mix


3. Take 2 quarter boiling pan add 8 cups of water and 2 cubes of vegetable stock and bring to boil 
4. Take a large boiling pan and add the other half of the chopped onions, and add half a pack/500gr of ristto rice without rinsing and fry it together for about 5 min



5. Add the vegetable stock a ladle at a time until the rice socks it all and becomes softer, add the small cube of butter


6. After the vegetable sock, you can also add the left over juice from the cooked seafood, it definitely adds the rich taste to it and after 5 min add the seafood to the risotto rice 


7. Cook for about another 5-10 min together adding vegetable stock if needed or too dry  and ready to serve with a sprinkle of Parmesan on top
