French Crêpes With Chicken Filling

This recipe is a great way to use up leftover chicken and boiled rice! With this super simple crepes recipe. What makes it interesting is the burrito filling!  It will be a great  week-night meal with a difference. 

Ingredients:

  • 3 medium eggs
  • 1 chicken breast
  • 1 onion
  • 5-6 table sp of rice
  • any type of cheese you prefer 
  • 1 and half cup of milk 
  • Add 2 cups of flour or until you get the texture you need
  • 2 table sp of olive oil or vegetable oil
  • 1 table sp of tomato paste
  • 1 tea sp salt
  • 1 tea sp baking powder
  • burrito spice mix
  • chopped dill, onions, parsley, which ever you prefer

Instructions for filling:

1. If you have any left over chicken you can use it up, I already had left over boiled chicken which i used, but you can take chicken breast and cut in small pieces and fry with a little bit of olive oil until golden. You can also make your chicken pieces in any size you prefer, i preferred to shred them with the help of forks.



















2. Chop the onion roughly and fry until golden brown 



 3. Add the chicken to the onions, 1 table sp of tomato paste and the burrito mix and steer until all well mixed, continue  adding 5-6 table spoon of already boiled rice 





Instructions for the Crêpes

1. Whisk 3 eggs and ad 1 and half cup of milk, add table sp on olive oil or vegetable oil, 1 tea sp of salt, mix all well and add the flour together with 1 tea sp of baking soda, mix all well and let it sit in the fridge for about 30 min if you have time 1 hour would be preferable 





2.  Put on the fire to a low heat and oil your pan for the first time with a few drops of oil, wait until the pain heats up, the surface of the crêpe should not be shiny anymore and the corners would start to bend then flip and let the other side to cook for about 3-5min. 


3. Put the filling and fold your crêpes, while doing that heat up your oven to 180c .





4. Grater the cheese and add on the top of the folded crêpes, and let its cook for about 30-40min until the cheese is melted and it should get a golden color, serve it with some chopped herbs.
