CABBAGE PKHALI
Pkhali is a very popular dish that can be made with many different types of leaves, including spinach, netlles, cabbage and beetroot. It can also be made with vegetables and nuts. In this recipe we show how to make Pkhali with Cabbage:

INGREDIENTS:
1.5 killos of cabbage
400 grams of walnuts
1 onion
6-8 tbs white vinegar
1 heaped tsp of red pepper
1 tsp of blue fenugreek
4 cloves of garlic
1 tsp of dried corriander
Pomegranate seeds for garnish
Salt (amount depends of personal preference)
PREPARATION:
Cut the cabbage. Half fill a deep pot with water, add 1 tbs of salt and and add the cabbage. Boil for 20-25 minutes. The cabbage must be soft.

Drain the water from the boiled cabbage using a sieve.

Allow to cool and then use your hands to firmly squeeze the leaves to remove as much liquid as possible. Finely chop the cabbage.

Grind the walnuts and garlic. Add 1 heaped tsp of red pepper, 1 tsp of blue fenugreek, 1 tsp of dried corriander and salt to the ground of walnut/garlic mixture. Mix thoroughly and then add 6-8 tbs white vinegar and mix again.

Chop the onion and add, together with the chopped cabbage, to the walnut /garlic/spice mixture.

Mix by hand until the Pkhali is smooth.

Serving: Shape the mixture by hand. Serve cold. We garnished ours with pomegranate seeds and salad leaves. Bon Appetit!!!
